within the Peppers Pier Resort & Spa complex, Salt Café is the perfect place to

Chef Profile Matthew O'Brien
With executive chef Matthew O'Brien at the helm, The Bayswater focuses on
masterfully created modern Australian dishes with an emphasis on seafood, fresh
local produce, seasonal fare and value for money. Matthew worked in the Hunter's
finest restaurants and catered for local food and wine heavyweights before
following his mentor to Newcastle for his first exposure to French cuisine -
with the partnership resulting in multiple awards. It was Matthew's passion for
seafood which led him to Hervey Bay, where he served as head chef at a number of
local restaurants before taking the top job at Bayswater.
